I woke up at 4:30 am (went to bed with her at 8:30) so after browsing the internet and signing up for Swagbucks I decided to go downstairs and cook. She didn't wake up until 7:45 so I had time to make some cranberry sauce to freeze for Thanksgiving and some pumpkin muffins for breakfast. I made them about two weeks ago but forgot the maple syrup when copying down the recipe. Not as good without that ingredient, let me tell you! Today they were downright yummy (even though I forgot the vanilla today)! Regardless, we didn't add anything to them but a bit of Earth Balance when they were fresh out of the oven. Soooo good!
Here's the recipe:
½ c. coconut flour
2 t. pumpkin pie spice
½ t. salt (I added less)
½ t. baking soda
6 eggs
4 T coconut oil or butter (I used Earth Balance), melted
⅓ c. pure maple syrup
1 t. vanilla
Heat oven to 400०F.
Grease muffin tins well.
Sift dry ingredients in small bowl.
Wisk eggs and add wet ingredients.
Add flour mixture to egg mixture, blending well til lumps disappear but not more than necessary.
Spoon into muffin tins, about ⅔ full.
Bake for 18-20 minutes or when toothpick inserted into center comes out clean.
Serve warm.
