Egg Drop Soup
Spinach Ricotta Chicken Bake
1/2 lbs. chicken breast cut into strips
1 lb spinach, thawed frozen chopped
15 oz. ricotta cheese
3T parmesan, grated
2 egg whites
1/4 t. garlic powder
pinch nutmeg
1 1/2 c. marinara
1. Preheat the oven to 400 degrees F.
2. Coat an 8x8 baking dish with olive oil spray.
3. Cook the chicken in a skillet until it just starts to get brown.
4. Place the spinach in the middle of a clean dishtowel. Wring out water.
5. Place the spinach in a large mixing bowl. Add the ricotta, Parmesan, egg whites, garlic powder and nutmeg. Stir well.
7. Move spinach mixture to the prepared dish over top of the chicken. With the back of a spoon, spread it out to uniformly fill the dish.
8. Bake for 20 minutes, or until is hot throughout and the top begins to brown.
9. Let stand for five minutes to slightly cool
10. Heat up the sauce.
11. Spoon sauce over chicken bake.
12. EAT!
Don't ask me what is going on with my fonts on that recipe. I have no clue.
Baked Apples
Cut the core and seeds out but leave the base intact.
Place in a baking dish.
Inside each apple add:
1T butter
1/2t cinnamon
drizzle of maple syrup
raisins and/or almonds
Pour some water in the bottom of the pan (about 1/2 inch)
Bake at 400* for about 40 min or until soft.
